4 West Café Update
This month we bring you an update and some information regarding the new café which is
currently under construction on the main parade. The 4 West café is due to be open in September
2009 and will have two separate operational outlets: a "Grab and Go" which will replace the
existing DolcHe Vita on the Parade and a lounge coffee bar with 160 seats.
The Head Chef from the Wessex Restaurant will prepare a range of hot specials at very
reasonable prices and a selection of home made salads, baguettes, soups and jacket potatoes with a
selection of fillings. A variety of frappés will also be on sale.
New Coffee Supplier
Matthew Algie has been chosen as the University's coffee supplier following their successful
tender last month and feedback from the coffee taster day. Matthew Algie's coffee is not only
Fairtrade certified, but also organic certified and Rainforest Alliance certified. This means that
coffee farmers are guaranteed a minimum price for their beans, so their costs of production are
covered. The farmers are paid a premium which enables them to invest in their communities to
improve living and working conditions.
Organic certification means that coffee farmers avoid unnecessary chemicals and pesticides -
good news for plant and animal life. Organic certification also means more money to the farmers,
over and above the Fairtrade price. The Rainforest Alliance seal means that farms look after
the tropical forests where they live and work. Wildlife is protected, rivers kept clean and
natural resources conserved.

Hospitality Outlet Survey Results
Over the past few weeks we have been conducting our annual customer feedback surveys.
Customers were invited to provide feedback for each of our outlets on campus. Each survey ran for
one week.
We thank everyone who took part in the surveys. We value the feedback our customers provide
and aim to make improvements to our service to meet customer
expectations where possible.
The results of the surveys are currently being collated and reviewed. The results for each
outlet will be published and we will be telling you what actions we will be making in
response.
June Healthy Recipe
Chicken, Asparagus & Edam Salad
Serves 4
Ready in about 25 minutes
Ingredients
500g small new potatoes
350g asparagus spears
5tbsp olive oil
125g Dutch Edam wedge,
cut into thin strips
125g cooked chicken breast,
cut into thin strips
For the dressing:
2 tbsp freshly chopped mint
1 tbsp freshly chopped flat leaf parsley
1 tbsp freshly snipped chives
1 tbsp white wine vinegar
1 tbsp lemon juice
1 tbsp clear honey
1. Cook the potatoes in lightly salted boiling water for 10 -12 minutes. Drain and allow to
cool.
2. Remove any woody stems from the asparagus by bending the end of the spears. They should
snap easily at the point where the woody part begins.
3. Heat 1tbsp of the oil in a griddle or frying pan. Place the asparagus spears in the pan in
a single layer. Cook for 5 - 6 mins, turning the spears once, until they are charred and just
tender. Remove and allow to cool.
4. Place the cooled potatoes, asparagus, Edam and chicken in a salad bowl and mix gently
together.
5. Place the herbs, remaining oil, vinegar, lemon juice and honey in a screw top jar with salt
and freshly ground black pepper and shake well to combine. Pour over the salad ingredients and toss
together to coat evenly. Serve immediately.

standard of service. We have set ourselves a minimum target of meeting 70% of the criteria. Each
